Shrimp Fajita Quesadilla Recipe This Shrimp Fajita Quesadilla recipe combines the boldness of Cajun spices, the zest of lemon pepper, and melty provolone cheese for a quick, delicious meal! Ingredients • For the shrimp: • 1 lb shrimp, peeled and deveined • 1 tbsp Cajun seasoning • 1 tbsp lemon pepper seasoning • 1 tsp chili powder • ½ tsp cumin • For the vegetables: • ½ chopped bell pepper (red, yellow, or green) • For the quesadilla: • 4 large flour tortillas • 8 slices of provolone cheese • Butter or cooking spray Instructions Step 1: Season and Cook the Shrimp 1. Place the shrimp in a bowl and season with Cajun seasoning, lemon pepper, chili powder, and cumin. Mix well to coat the shrimp evenly. 2. Heat a large skillet over medium-high heat and add a drizzle of oil. 3. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until the shrimp are pink and cooked through. Remove from the skillet and set aside. Step 2: Sauté the Bell Pepper 1. In the same skillet, add a bit more oil if needed and toss in the chopped bell pepper. 2. Sauté for 3-4 minutes until the bell pepper softens slightly but still has a little crunch. Remove from heat. Step 3: Assemble the Quesadillas 1. Heat a clean skillet over medium heat. Lightly butter one side of a tortilla. 2. Place the tortilla buttered side down in the skillet. 3. Add 2 slices of provolone cheese to one half of the tortilla. 4. Layer on a few shrimp and some sautéed bell peppers over the cheese. 5. Fold the tortilla in half to create a half-moon shape. Step 4: Cook the Quesadillas 1. Cook the quesadilla for 2-3 minutes on each side, pressing down gently with a spatula, until the tortilla is golden brown and crispy, and the cheese is melted. 2. Repeat the process with the remaining tortillas and filling. Step 5: Serve and Enjoy 1. Slice the quesadillas into wedges and serve hot. 2.
