Shrimp Fajita Quesadilla Recipe This Shrimp Fajita Quesadilla recipe combines the boldness of Cajun spices, the zest of lemon pepper, and melty provolone cheese for a quick, delicious meal! Ingredients • For the shrimp: • 1 lb shrimp, peeled and deveined • 1 tbsp Cajun seasoning • 1 tbsp lemon pepper seasoning • 1 tsp chili powder • ½ tsp cumin • For the vegetables: • ½ chopped bell pepper (red, yellow, or green) • For the quesadilla: • 4 large flour tortillas • 8 slices of provolone cheese • Butter or cooking spray Instructions Step 1: Season and Cook the Shrimp 1. Place the shrimp in a bowl and season with Cajun seasoning, lemon pepper, chili powder, and cumin. Mix well to coat the shrimp evenly. 2. Heat a large skillet over medium-high heat and add a drizzle of oil. 3. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until the shrimp are pink and cooked through. Remove from the skillet and set aside. Step 2: Sauté the Bell Pepper 1. In the same skillet, add a bit more oil if needed and toss in the chopped bell pepper. 2.
