CHICKEN ADOBO Serves 2-3 INGREDIENTS 500g Chicken thighs and legs, bone-in ¼ cup (60g) regular Soy Sauce (Filipino brands like Silver Swan works best) ⅓ cup (75g) Red Cane Vinegar 6 cloves Garlic, crushed 1 ½ tablespoons (18g) Brown Sugar 2 teaspoons Whole Black Peppercorns 2 pieces Bay Leaves, dried 1 tablespoon Oil (for searing) ⅛ cup (30ml) Water Chopped Green Onions (for garnish) Best served with rice.
